Cooking Masterclass | Borough Market: The Knowledge with Angela Clutton

Join food writer - cook - presenter Angela Clutton for a 3 hour cookery masterclass in our learning studio, and learn to cook a selection of dishes from her most recent book Borough Market : The Knowledge.

If you follow the Thames path northwards from the Garden Museum, you will eventually find yourself at London’s premier food market – the world renowned Borough Market. Angela Clutton is responsible for their latest cookbook Borough Market: The Knowledge which explores the wide variety of traders at the market, along with recipes for their produce. Angela joined us for a masterclass in vinegar a few years back and we’re delighted she will be joining us again for a hands on class inspired by our SE1 neighbours.

During the class you’ll learn recipes that showcase the joy of shopping and cooking seasonally, while learning some key skills such as how to stuff and roll leaves, making egg + fat based emulsified sauces, and what makes a perfect soup.

You’ll also hear from Angela on why markets and seasonality matter, explore what spring / summer produce might be and ways to enjoy it.

This class is a combination of hands on and demo by Angela. The class includes a sit down lunch and a recipe pack to take away.

  • Black rice and feta stuffed chard with spiced yoghurt
  • Roasted asparagus with tarragon mayonnaise / hollandaise
  • Watercress soup with lemon & thyme breadcrumb

Open to all levels of skills and interests. This class is suitable for Adults 16 and over.

*This class is part of our hands-on monthly masterclass cooking sessions, which focus on specialist topics or advanced cooking techniques.  Sessions are usually on Sunday and held in the Garden Museum’s food learning studio. Each class is 3 hours, and will include tastings or a full meal eaten together depending on the course. All profits from our cooking masterclass series help to cover food costs for our community programmes.

    I am a food writer, cook and presenter.

    My next book - Borough Market: The Knowledge - is published by Hodder and Staughton in October 2022.

    As presenter and curator of live or broadcast events I host Borough Market’s ‘Borough Talks’ podcast series - featuring Melissa Hemsley, Kimberley Wilson, Tim Lang, Tom Parker-Bowles and more - and have hosted for online cookalongs with Yotam Ottolenghi amongst others.

    I am Co-Director of the British Library’s ‘Food Season’, curating and presenting talks and events across food issues, culture and writing.

    My debut book The Vinegar Cupboard (published in March 2019) won the Jane Grigson Trust Award, and in 2020 was shortlisted for the André Simon Food and Drink Awards; won two awards at the Guild of Food Writers Awards; and won ‘Debut Cookery Book’ at the Fortnum & Mason Food and Drink Awards.

    I’ve written on food and drink for publications such as the Daily Telegraph, Independent and Country Life; commercial clients include brands such as Doves Farm and Lurpak. Broadcast work includes the recent Channel 5 ‘Inside…’ series.

    I regularly write for Borough Market for whom I am also a recipe developer, demonstration cook, and am host of their hugely popular Cookbook Club.
