Banana Leaf, Blossom and Fruit: a Caribbean Cooking Masterclass with Annika Clinkett

Join Annika Clinkett in the learning studio for a fun 3 hour hands on cooking masterclass and lunch exploring all the edible parts of the banana via Caribbean cuisine.

This class is inspired by Lucian Freud’s Bananas (1952) on display as part of our Lucian Freud : Plant Portraits exhibition. Freud painted the bananas whilst visiting Jamaica. A ticket for the masterclass includes entrance to the Garden Museum and the Plant Portraits exhibition

In this vegan cooking masterclass with plant-based chef and nutritional therapist Annika Clinkett, you’ll explore Caribbean cuisine, via all things banana.

You’ll cook with banana leaf, banana blossom and the banana fruit.  Banana leaf is often used to wrap foods before cooking – think of it as an all natural tin foil and Banana blossom is used as a plant-based alternative to fish, in vegan and plant based recipes, due to its texture. Come and learn more about how to use these amazing ingredients as well as how to source them in London.

  • Curried banana blossom & butterbean
  • Mashed green bananas
  • Blue draws (sweet)
  • Banana blossom salt phish fritters
  • Caribbean Banana punch/shake (sweet)
  • Green banana chips 

This class is a combination of hands on and demo by Annika,

Open to all levels of skills and interests. This class is suitable for Adults 16 and over.

*This class is part of our hands-on monthly masterclass cooking sessions, which focus on specialist topics or advanced cooking techniques.  Sessions are usually on Sunday and held in the Garden Museum’s food learning studio. Each class is 3 hours, and will include tastings or a full meal eaten together depending on the course. All profits from our cooking masterclass series help to cover food costs for our community programmes.
