Discover the depth and complexity of one of Mexico’s most iconic dishes in this three hour hands-on cooking class with Karla Zazueta, Mexican cookery teacher, food writer, and author of Norteña.
Under the expert care of Karla, in this class, you’ll learn how to prepare an almond-based mole, a traditional sauce made from a blend of dried chilies, nuts, spices, and seeds, known for its deep, layered flavours.
You will also make some classic sharing dishes: Mexican tomato rice, refried beans, and freshly pressed corn tortillas.
Throughout the class Karla will guide you through each step, sharing cultural insights and practical techniques along the way. The class will end by sitting down to enjoy lunch together, a chance to sample and savour everything that has been made.

Open to all levels of skills and interests. This class is suitable for Adults 18 and over.
*This class is part of our hands-on monthly masterclass cooking sessions, which focus on specialist topics or advanced cooking techniques. Sessions are usually on Sunday and held in the Garden Museum’s food learning studio. Each class is 3 hours, and will include tastings or a full meal eaten together depending on the course. All profits from our cooking masterclass series help to cover food costs for our community programmes.

Karla Zazueta grew up in Baja California, in the north of Mexico. When she moved to the UK twenty years ago, she brought with her all her family’s recipes and ways of cooking that had been passed down through the generations. She decided to make a career from her passion for cooking and started her blog, Mexican Food Memories.co.uk, where she writes about food and Mexican tradition. She runs cookery classes from her home, as well as hosting regular sold-out supper clubs at home and in venues across London. Her writing has been featured in Guardian, Observer Food Monthly and BBC Good Food, and she has been a guest on BBC Radio 4’s The Kitchen Cabinet with Jay Rayner.
