Cookery Masterclass | Magnificent Puglia with Ursula Ferrigno

We welcome back food writer and chef Ursula Ferrigno for a cookery masterclass and insight into recipes from the Italian region of Puglia.

Ursula is a highly regarded expert on Italian cuisine having published many books on different aspects of the cuisine including on the Venetian, Amalfi and Sicilian regions. In this class Ursula will turn her attention to Puglia – the ‘heel’ of Southern Italy.

In this class Ursula will share with you 3 recipes from her recent travels to Puglia, which you will have hands on experience of making, before sitting down to lunch to enjoy everything that you have made.

Sample recipes (all vegetarian);

  • Torta di bietoline e ricotta
    A light and crisp pastry made with oil and 00 flour, filled with beautiful seasonal greens and ricotta and herbs and then baked till golden enjoyed as part of antipasto.
  • Ciceri e tria
    Handmade water pasta with chickpeas in a light spicy tomato sauce served with a fried pasta relish on top, famously from Lecce.
  • Biscotti alle noci
    Pistachio, apricots and fig biscotti Ursula’s ‘top drawer’ favourite.

This class is a mixture of hands on and demo by Ursula.

Open to all levels of skills and interests.  This class is suitable for Adults 18 and over.

*This class is part of our hands-on monthly masterclass cooking sessions, which focus on specialist topics or advanced cooking techniques.  Sessions are usually on Sunday and held in the Garden Museum’s food learning studio. Each class is 3 hours, and will include tastings or a full meal eaten together depending on the course. All profits from our cooking masterclass series help to cover food costs for our community programmes.

    Ursula Ferrigno

    Ursula Ferrigno is an acclaimed and experienced food writer and chef who embodies the Italian and Mediterranean passion for good food made from the freshest natural ingredients. She trained at the Auguste Escoffier School of the Culinary Arts and has taught at leading cookery schools in both the UK and Italy, including the celebrated Leith's School of Food and Wine, Divertimenti, and La Cucina Caldesi in Ireland. She toured the US, running classes in Sur la Table stores, is consultant chef to the popular Caffe Nero restaurant chain in the UK and has made numerous appearances on British television. The author of more than 17 cookery books, Ursula has also written for many publications, including Olive, BBC Good Food, Taste Italia, and American Gourmet.
